Thermolysin is a thermostable metalloproteinase that improves the digestion of proteins, owing to its high temperature stability. It is 316 amino acids long, expressed in Bacillus Subtilis. Its optimal activity is at pH 5.0-8.5, while temperature at 65-85 degree Celsius.
Thermolysin exerts its protease action by catalyzing the hydrolysis of peptide bonds containing hydrophobic amino acids.
